Our 'Fugassa' is the epitome of luxury in simplicity. Our pastry chefs have been able to transform the typical dessert of the Venetian popular tradition in something of rare taste and balance. The kneading method, the rising time and the cooking transform simple ingredients such as butter, sugar, flour and sourdough in a tender and tasty product. Try it with the traditional mascarpone cheese cream or compotes depending on personal taste and on the occasion.
The secret is in the Sourdough refreshed every day, as per tradition handed down from generation to generation. Two basic doughs and two short leavening, then we proceed to the final dough with all the ingredients in the right quantities. First the dividing into loaves, then the last leavening for at least 7 hours in special temperature (34 ° C) and humidity (60%) controlled rooms. Before being introduced into the oven, the Fugassa is cross-engraved to allow its vertical development. It is cooked slowly, for more than an hour and at different temperatures. Cooling at room temperature for at least 10 hours. Each Fugassa is carefully packaged in elegant tin packages.
